Mixed Nuts Mooncake

150g melon candy (cut into fine pieces) 150 225
100g whole almond (toasted and chopped) 100 150
150g mandarin orange candy/ pat peng (sliced) 150 225
60g walnut (toasted and chopped) 60 90
60g white melon seed (toasted) 60 90
60g white sesame seed (toasted) 60 90
150g koh fun 150 225
4 dessert spoon rose jam 4 6
60g of oil 60 90
1/2 cup golden syrup 130 195
2 tablespoon Chinese wine (Mui Kwei Loh) (optional) 2 3
2 tablespoon sesame sauce (optional) 2 3
2 tablespoon of water if mixture is too dry 2 3
For Dough
300gm Plain Flour 300 375
250gm golden Syrup 250 312.5
90gm pure peanut oil (included 30gm peanut butter) 90 112.5
few drops sesame oil 4 5
1/2 tbsp alkaline water 0.5 0.625

For Dough
Mixed everything together and wrap the dough in an airtight container overnight. DO NOT OVERMIXED the dough.

For the fillings
Just mix everything together and rest for an hour before rolling into balls.

Breadmaker Butter Loaf

Recipe :

60gm full cream fresh milk
2 large egg (lightly beaten)
100gm Starter Dough
4 1/2 tbsp sugar
1 tsp salt
270gm bread flour
55gm cake flour
2 1/4 tsp instant yeast
75gm butter (soften at room temperature)

Place all ingredients based on above listed sequence.
Select SWEET function, let the BM (breadmaker) do all the work.
When bread is done, remove from BM and cool on wire rack before slicing.
